Understanding the Basics of Homemade Mayonnaise
Mayonnaise is an emulsion—a mixture of two liquids that don't normally combine. In this case, oil and vinegar or lemon juice come together with the help of an emulsifier: egg yolk. This simple combination creates a creamy condiment that has been a kitchen staple for centuries. The word "mayonnaise" likely originated in the French port city of Mahón, though some food historians credit Spanish origins. Regardless of its history, understanding how these three basic ingredients work together helps you make mayonnaise successfully at home.

The egg yolk contains lecithin, a natural substance that acts as a bridge between oil and acidic ingredients. When you whisk an egg yolk with acid, you create tiny droplets of oil that can suspend throughout the mixture. The result is a thick, creamy sauce that's far fresher than most store-bought versions. Store-bought mayonnaise typically contains preservatives and stabilizers that extend shelf life but can affect flavor. Making your own takes about five to ten minutes and requires only a few ingredients you likely already have at home.
Commercial mayonnaise contains roughly 70 percent oil by weight, which contributes to its calorie density. One tablespoon contains approximately 90 to 100 calories. Homemade versions follow similar ratios, though you control exactly what goes into yours. This matters if you have preferences about oil types, egg freshness, or ingredient sourcing. Understanding these proportions helps you troubleshoot if something goes wrong during the mixing process.
Practical Takeaway: Before you begin, gather your ingredients and understand that mayonnaise's success depends on a simple chemical process. You're not following a complicated recipe—you're applying basic kitchen science. Knowing this removes the mystery and builds confidence.
Essential Ingredients and Equipment You'll Need
Making mayonnaise requires only three core ingredients: one egg yolk (room temperature), one cup of neutral oil, and one tablespoon of acid (vinegar or lemon juice). That's genuinely all you need for basic mayonnaise. The room temperature requirement matters because cold ingredients mix less effectively. If your egg has been refrigerated, remove it 30 minutes before starting. Some recipes add a small amount of salt or mustard powder, which can improve flavor and help stabilize the emulsion, though these are optional additions.

The type of oil you choose significantly affects both flavor and success rate. Neutral oils like vegetable oil, canola oil, or light olive oil work best for beginners because they don't overpower the taste. Extra virgin olive oil has a strong flavor that can make mayonnaise taste bitter or heavy. Some cooks use half neutral oil and half light olive oil as a compromise. Avocado oil and other specialty oils also work but tend to be expensive for something you're using in larger quantities. For your first attempt, regular vegetable oil from any grocery store provides the most reliable results.
Equipment needs are minimal. You need a bowl (medium-sized works well), a whisk, and something to mix with. While electric mixers and food processors make the job faster, they're not required. A hand whisk, fork, or even a spoon can work, though they require more arm effort. If using an electric mixer, use the lowest speed setting and stay close by—electric mixing can break the emulsion if done too vigorously. Many cooks prefer whisking by hand because it gives better control and helps you feel when the mixture reaches the right consistency.
Practical Takeaway: Start with basic ingredients and simple equipment. Room temperature egg yolk, neutral oil, and vinegar or lemon juice are all you need. Don't buy specialty ingredients for your first batch—use what you have and upgrade later if desired.
Step-by-Step Instructions for Making Mayonnaise
Begin by placing your room temperature egg yolk in a clean, dry bowl. The bowl must be clean and free of any oil residue, which can prevent proper emulsification. Crack your egg carefully, separating the yolk from the white. Some people crack eggs over a small cup first, then slide the yolk into the mixing bowl—this reduces the risk of shell fragments. Once you have your yolk, whisk it for about 30 seconds until it becomes slightly paler and thickens a little. This breaks down the yolk and prepares it to accept the oil.

Add your acid—either one tablespoon of vinegar (white or apple cider vinegar work well) or fresh lemon juice. Whisk this together with the egg yolk for a few seconds. The acid helps stabilize the emulsion and adds flavor. Now comes the critical part: adding the oil. Pour oil into the bowl very slowly while whisking constantly. Start with just a few drops—literally a drizzle the size of a thin line. Whisk vigorously as you add each small amount. This gradual addition is crucial. If you add too much oil at once, the emulsion breaks because the egg yolk can't incorporate all the oil at that rate.
As you continue whisking and adding oil in small amounts, you'll notice the mixture thickening. After incorporating about one-quarter of the oil (roughly one-quarter cup), the emulsion becomes more stable. At this point, you can add oil slightly faster—still in thin streams, but not single drops. Continue whisking while you add the oil. The entire process typically takes five to ten minutes. By the end, you'll have a thick, creamy sauce that holds peaks when you lift the whisk. If the mayonnaise seems too thick, thin it by whisking in a small amount of water, vinegar, or lemon juice—just a teaspoon at a time.
Practical Takeaway: The key to success is patience with oil addition. Slow and steady wins this process. Start with drops, move to thin streams, and whisk constantly. This methodical approach prevents the emulsion from breaking and guarantees success.
Troubleshooting Common Mayonnaise Problems
The most common problem is a "broken" emulsion—the mixture becomes grainy or separates rather than forming a smooth cream. This happens when too much oil gets added too quickly, overwhelming the egg yolk's ability to incorporate it. If this occurs, don't discard the mixture. Start with a fresh egg yolk in a clean bowl and slowly whisk in the broken mayonnaise as if it were oil. This often repairs the mixture. Some cooks keep a small amount of water nearby and whisk in a teaspoon of water if the mixture appears to be breaking—this dilutes the oil slightly and can save the batch.

If your mayonnaise is too thick, it's over-concentrated with oil. Simply whisk in a small amount of water, vinegar, or lemon juice—a teaspoon at a time—until it reaches the desired consistency. If it's too thin, you likely didn't add enough oil or whisked in too much liquid at the end. This still tastes fine; it's just looser than typical mayonnaise. You can continue adding oil in very small amounts while whisking, though this requires careful attention to avoid breaking the emulsion again.
Temperature fluctuations can also cause problems. If your kitchen is very cold, ingredients take longer to emulsify, and the process may fail. Warm the bowl with hot water, dry it completely, and try again with ingredients that have sat out for 30 minutes. Conversely, if your kitchen is very warm, work quickly to prevent the egg yolk from becoming too warm. Some cooks set their bowl in an ice bath while making mayonnaise in summer. Additionally, if you're using old eggs or eggs from unclear sources, the yolk may not emulsify well. Fresh eggs from reliable sources give better results. Finally, any trace of egg white in your yolk can prevent proper emulsification, so separate eggs carefully.
Practical Takeaway: Most problems have straightforward solutions. A broken emulsion can be repaired by starting over with a fresh yolk. Temperature and ingredient freshness matter more than people expect. Keep these variables in mind, and you'll solve almost any issue that arises.
Flavor Variations and Creative Uses
Once you master basic mayonnaise, you can create endless variations by adding ingredients after the emulsion forms. Aioli is mayonnaise with garlic—simply mince or crush 2-3 garlic cloves and whisk them in after the basic mayonnaise is complete. Sriracha mayo adds heat and modern
